Ingredients
- 1 ¼ cups pecans
- 1 ½ cups rolled oats
- ½ cup protein powder
- 6 pitted dates
- ¾ cup coconut oil
- ½ cup cocoa powder
- 3 tbsp honey

Step 1
Line a loaf pan with parchment.

Combine pecans, rolled oats, protein powder, dates, and ½ cup coconut oil in a food processor. Pulse until a sticky dough forms. Set aside ¾ cup of the mixture, then press the remaining crust into the prepared loaf pan.

In a small microwave-safe bowl, melt remaining ¼ cup coconut oil in the microwave in 30-second increments, stirring in between. Add cocoa powder and honey. Stir to combine, then pour over crust.

Sprinkle remaining pecan mixture over the bars and press gently to adhere. Sprinkle with salt to taste. Freeze 2 hours, then cut widthwise into 12 bars.
